Anyone have a good recipe they'd like to share? My dad makes a great pecan pie but alas, he is out of contact at the moment and I have a Thanksgiving potluck coming up. I'm looking for a recipe with a pretty high nut:filling ratio--I hate pecan pie where there is just a thin layer of decorative pecans on the top and then miles of pecanless filling underneath. Such a disappointment:(

Here's my Grandma's recipe. You can put as many nuts as you want into it. It seriously makes the best pecan pie I've ever had. I love pecan pie, but I almost hate to get it at restaurants because so many people use recipes with Karo syrup instead of just brown sugar. The syrup tends to make the pie to sticky/syrupy/gooey for my taste.

Here you go! Best pecan pie ever:

1 cup brown sugar
½ cup white sugar
3 Tbs. milk
1 stick butter, melted
1 Tbs. plain flour
1 tsp. vanilla
2 eggs
½ cup nuts (or more if you like)

Mix sugars, flour, and butter with milk in a saucepan over low heat until all have blended. Stir in vanilla, eggs, and nuts. Pour into unbaked pie shell. Bake at 375 degrees for about 45 minutes or until firm.

Mmmmm, looks good! I'm not sure if my dad uses Karo or not, but I know what you mean about the goo you get in "commercial" pie---definitely NOT what I'm going for!

I actually haven't made this recipe, just eaten it a lot. :) If I remember correctly, grandma puts the butter in the saucepan first to melt it before adding the milk, flour, and sugars. I believe she beats the eggs a bit before adding them, too.

there's a nice pecan tart in the november martha stewart living issue. it's part of the thanksgiving spread

crookedtree, thank you for posting that! I think I'm going to make it! Two of the quantities are coming up kind of garbled for me, though...

I noticed that - it looks fine on my work computer, but looks garbled at home!

It should be:

one half cup of white sugar
one half cup of nuts

Let me know how it turns out!! I think I am going to try and make it for my office holiday party in December.

Only 1/2 cup nuts? I put closer to 1 1/2 cups in mine! I always figure the worst that will happen is that it will fall apart but still taste good :-

Made a chocolate pecan pie for dinner tonight, out of (of all things) "The White Trash Cookbook". SO good. Not as gooey-rich as most pecan pies...sweetened with molasses & a little sugar. HUGE hit, even with people that don't love pecan pie.

crookedtree, thanks again for sharing your grandma's recipe with us! The pie was absolutely delicious. My boyfriend says it's the best pecan pie he's ever had. (And he wasn't just saying that because I made it, trust me!)

So, I made this pie for the post-thanksgiving potluck I was invited to. The only thing I changed was to add more nuts (probably around a cup and a half). It turned out beautifully---I think it's quite possible it *is* the best pecan pie ever. And I loved that it absolutely did not taste of corn syrup or come out gooey like the pie you might buy at a grocery store. I have a load of pecans that my mother sent me so I think I'm going to be making another one of these soon!

Yay, I'm glad it turned out so well for you all!! Knittykat, I don't think anyone ever follows that "one half cup nuts" rule - that's just what happens to be written on the recipe card. ;)

I didn't make this pie for Thanksgiving, but my uncle did, and it was amazing as always. He always chops the nuts first, which I think is better (a lot of folks just do whole pecan halves). I think he used about a cup and a half, too.

I'm definitely making this for my office holiday party next month.
