I wasn't really planning to do Thanksgiving, but now I'm hosting. Funny how that happens. It's me, nicegirl, my roommate, and my other friend. It's going to be a stupid amount of food.
As far as I know, nicegirl is bringing:
tofurky -- we so looked for the quorn roast!
homemade bread
mashed potatoes
and maybe stuffing...
I have:
green bean casserole
sweet potato colcannon
cranberry salad
a lentil loaf (which doesn't look to be all that good -- but I can probably put it on sandwiches next week)
and it's currently 1:30 a.m. and I'm making lemon cupcakes...because, well, I had some lemons and I'm not tired....
my friend is bringing:
chocolate pudding cake
maybe some other veg?
wine
my roommate is doing:
salad
appetizers
fruit tarts
Blargh. I can hardly walk already. |

This week, I've made:
Ranch oyster crackers because... why not?
Chex Mix, and because I had so much Chex left, Puppy Chow.
Sweet tea, because of the ice tea thread.
Deviled eggs, classic and dill horseradish. The yum right there.
I usually make the cranberry orange relish from the back of the OceanSpray bag. This time, I added apples and mixed up some cranberry and black cherry jello and threw it in a mold. Hey, we'll see.
Tomorrow, I'll make cheesy hash brown casserole (with Special K topping).
My mom is on this new big thing with fried pepperoni. She had it in Nova Scotia and she's been playing with different brands, cuts, etc. She'll make some of that for appetizers, with marinara and sour cream to dip.
And we have a 12lb turkey. To feed 8-9 people. I'm worried.
There will be lots of other food, I just don't know what.
Oh, by the way, we're having our big family gathering tomorrow (Friday). |

Now what is everyone doing with leftovers? Personally, I think using up the leftovers are just as fun as Thanksgiving itself.
I'm eating the stuffing and mashed potatoes because I could eat those by the bucketloads, and there isn't too much. This morning I shredded up a couple of leftover uncooked potatoes for hash browns.
I'm using the meat to make pot pie and enchiladas (both are freezer-friendly), but I think I still need a couple more recipes because there is a lot.
I'm kind of sick of sweet potatoes because I ate a lot but I have a few raw ones left. I also have a ton of dessert - pumpkin cheesecake, cannoli, tiramisu, brownies, chocolate trifle. I'm thinking of inviting friends over tonight for a dessert party. |

I'm trying to figure out what to do with leftovers too. Everything is eaten except a lot of cranberry sauce. Any ideas? _________________ You were right about the stars; each one is a setting sun.

I have officially lost all interest in pie. I didn't think that was possible.

Haha, seriously, our family too. On Thanksgiving, my aunt brought a pecan pie and a cherry pie; then a few days later for my birthday she brought a strawberry pie, and I also had a mud pie over the weekend as well. _________________ mikan: a sweet fruit & mmm, so delicious. |

My meal went okay. The turkeys were done way earlier than I thought they would be and ended up a bit dry after being held for so long. Oh well. Everything else was good. I purposefully made way too much so I would have leftovers. Last year there was a bit left, but not a lot, and they were mostly eaten up before I got to have some. For shame! The gf and I ate most of the stuff over the weekend (stuffing was the first to go).
I was also thinking about making tortilla soup with one of the carcasses. The other one will be a traditional turkey vegetable soup for my mom.
I had no pie this year. wtf? _________________ It felt like a winter machine that you go through and then you catch your breath and winter starts again and everyone else is springbound. -- D. Williams |

wild oats was sold out of the quorn roasts every time we checked back, we went in like four times!
i had a migraine and slept through the dinner. poor me.
and my husbands nephews (teenaged boys) ate all the mashed potatoes before i got any!
i think i will make my own thanksgiving dinner this thursday, and decorate the apartment for the holidays.
hopefully i'll find a quorn roast this time around.
