Mmmmmm, I made soup tonight. And I am having a hard time resisting posting it, because it turned out really good. But I am also a bit weird about linking to my blog. So, I think I think I will just copy/paste:
Abbondanza Squash Soup
* 2 tablespoons butter
* 1 small onion, chopped
* 1 stalk celery, chopped
* 1 medium carrot, chopped
* 2 medium potatoes, cubed
* 1 medium squash - peeled, seeded, and cubed (whatever kind you have, they recommended Butternut but I used Delicata)
* 1 (32 fluid ounce) container chicken or veggie stock
Melt the butter in large pot, and cook the onion, celery, carrot, potatoes, and squash until lightly browned [I cooked the squash in the oven, separately]. Pour in enough of the stock to cover vegetables. Bring to a boil. Reduce heat to low, cover pot, and simmer for about 40 minutes, or until all vegetables are tender.
Transfer the soup to a blender, and blend until smooth. Return to pot, and mix in any remaining stock to attain desired consistency.
Season with salt and pepper to taste.
This recipe is from Abbondanza Farms in Boulder which provided *all* of the ingredients but the butter (including the veggies that made the stock, recipe from Glitter!). _________________ <3 free range glitter pony <3

GREENBEAN'S HEARTY MISO SOUP
2 cups broth, homemade or from a boullion cube
Soba noodles
Edamame, shelled
Smoked tofu, diced
1 tsp miso (to taste)
Boil broth and add soba noodles, tofu and edamame. Boil for 10 minutes until noodles are cooked. Remove from heat and add miso.
Options:
Add 1 cup raw spinach in the last 2 minutes of boiling.
Add 1/2 cup julienned carrots when you add the soba.
Stir in a beaten egg in the last 2 minutes of boiling for egg drop soup.
