I made the Decadent Brownies on page 191 of The Garden of Vegan and got cake pretty much. How do you guys get brownies that aren't so airy, and well, cakey? I guess what I'm looking for is something more dense. Any other vegan brownie recipes or suggestions for modifying the Garden of Vegan one? _________________ I'm not revealing any tricks of the trade becauase there ain't no magic in the breakdown baby |

I just looked at that recipe... and it's almost exactly the same as the one I use for cupcakes! Which are definitely NOT the same as brownies.
My favorite recipe (not vegan) doesn't use any leavening ingredients, except an egg (which I think you could sub tofu for pretty easily - and then switch the butter for margarine). So I would say that's the main problem - too much baking soda/powder.
I hear this is a good recipe, but I haven't tried it yet.
Vegan brownies are a little tricky because most egg substitutes tend to make things a bit spongy.
My last suggestion is to cook them for less time - don't bother with the toothpick test. take them out a little before you would normally take out a cake. They may fall a bit in the center, but that's ok, because they'll be fudgier.

Try not stirring as long as well. I tend to stir things a lot and my brownies always end up very high (and dry), while my mom (who stirs only enough to mix) ends up with the perfect brownies. I also second taking them out when you think they're not quite done. Also, if frosting, put it on right away. It will soak in a bit and make them more moist. _________________ "You said what?! ... I am also a serial recipe note taker!
After some searching (admittedly I'm horrible at it!) I can't find Thora's recipe. Could you pretty please send it to me? The more brownie recipes I have the better!
