I made Thai red curry paste from scratch, and then made a red coconut curry with Atlantic cod, baby eggplants, and baby corn, with Thai red rice. Shit was delicious. _________________ The plural of anecdote is not data.

So did you all just stop having dinner or something? Not me! I have dinner almost daily!
Tonight my lady is taking me out for lobster and prosecco. Ooh la la! _________________ The plural of anecdote is not data.

I have dinner daily, sometimes twice if I stay up too late!
Tonight may end up being spinach with peanut butter sauce, eaten with a piece of garlic naan. Half cooking, half lazy. Although I also have a bag of mixed cut braising greens in the fridge... and some carrots that may become cake...
I'm in a cooking mood lately, and it is the best.
(Lobster and prosecco!!!) _________________ Not into the whole brevity thing.

That spinach, naan & peanut sauce dinner sounds delicious!
(Although lobster and prosecco will forever be the best meal ever. Thank god it's too expensive to eat regularly, or I may never eat a vegetable again.)

Tonight was take-out pho, because it's so damn cold and Mondays are late for me. Last night I made stuffed peppers with ground turkey, kale, carrots, peas, scallions, various veggies, etc. and home made tomato soup. _________________ (Human sass. Robotic precision.)

I found myself short an onion (AFTER going to the grocery store), so I had shrimp gyoza instead. Tomorrow will bring the spinach with peanut sauce, aka one of the healthiest things I eat. (I usually eat an entire giant-ass one-pound bag of spinach when I make this. Ah, single people dinners.) _________________ Not into the whole brevity thing.

Im loving my slow cooker these days. Ive been avoiding the kitchen and cant stand to be in there for more than 10 minutes (I usually LOVE cooking and can spend hours in my kitchen). I know this will pass :)
I made chili a few days and today Im making chicken cacciatore. Bone-in skinless dark meat chicken, prepared pasta sauce and TONS of veggies (zucchini, mushroom, bell peppers, onions, tomatoes). I have some fresh kale and Im not sure if I want to stir it into the sauce in the last 30 minutes or saute it and serve on the side.
I was curious to make slow cooker sweet and sour chicken but all the recipes I see are using bottled sweet and sour sauce. Does anyone have a good recipe for slow cooker sweet and sour chicken? Preferably with lots of veggies. |

Think I'm gonna try that red lentils and rice with caramelized onions recipe from Veganomicon and eat it with some greens.

Tonight was wholemeal pancakes (crêpes) stuffed with cream corn and homegrown silverbeet, topped with cheese sauce.
And dessert (eaten before the main, because that had to bake) was pancakes with brown sugar and lemon.

With the leftovers, I made stuffed acorn squash! Roasted an acorn squash, scooped out the insides, mashed it with leftover lentils/brown rice/caramelized onions. Put it back in the oven for 20 min. Ate with a side of spicy braised chard.
