Tonight we are having jerk chicken that has been marinating for a few days in jerk marinade made with scotch bonnets from our bush, and some sort of spicy mango/red onion/coriander salad concoction. Maaaaaybe some rice to round things out. Neither of us are big chicken eaters, but my jerk chicken is pretty awesome (imo).

Arborio rice with sauteed onions and garlic, spinach, and PINE NUTS (I have a bag of pine nuts in the freezer that I have been saving for "special occasions", but I realized they are going to go weird soon so now I can have a special occasion every night!). I'll probably toss in some chickpeas too, to ensure a little protein. I've been on a clean out the pantry cooking kick lately, so this will use up the last of my random arborio rice supply!

It was a really good meal in general. So good that I'm having leftovers (including some random brown/wild rice I found in the pantry, woot for cleaning out the pantry!) on top of lettuce (woohoo first CSA pick up last night!) for lunch today. Psyched for lunch time!

Last night my sis made a teriyaki-ish chicken and rice with broccoli. It was pretty darn good. And she cooked some frozen edamame which I tried for the first time and enjoyed. Also enjoyed making nerd jokes about Aomame from 1Q84 lol. Oh and a big glass of ice cold milk mmm....

I'm making some white bean/tuna salad to go on top of a mountain of various baby greens from my garden. And some no-knead bread, which I'll probably slather in butter and roasted garlic. Yay for warm weather meals!

a few minutes ago- fat free Greek yogurt, blackberries and honey
soon- five dates
later- probably another Greek yogurt with honey or a bag of frozen steam-in-bag mixed veggies

Middle Eastern takeout: fava bean sandwich & baba ganoush sandwich and fries and stolen bits of husband's lamb platter.

I realized a few minutes ago that we had ordered takeout from the same restaurant the day I went into labor with my daughter. All I have right now is heartburn though :)

Tonight is "stuff on rice", which is what I make most nights. Lots of veggies, usually with some kind of meat, on rice with. I am cooking some stew beef the dude brought home to get it...soft enough to eat with stock, soy sauce, sriracha, ginger, garlic, red pepper flake, and pepper. When that's done, I will take the meat out and reduce the sauce/adjust seasonings/add some corn starch.

We have a metric shit ton of veggies in the house and I am going to use at lease some of all of them. Bok choy, bell pepper, zucchini, mushrooms, onion, edamame, sprouts, and things I am most likely forgetting. Whack that all together, sauce it up, done. Yum.

I don't know why I wrote all that about my pretty base dinner. I am hungry I guess. :)

I ate a big sandwich for breakfast/lunch so dinner is going to be a frozen strawberry and milk smoothie. Last week during a moment of weakness I ate a 600 calorie milkshake. I'm still feeling bad about that.

Tonight we are having "stuff on noodles". Whatever veggies are hanging out in our fridge, stir fried shrimp and noodles.

On the weekend we had "stuff on rice": italian sausage, onions, peppers, lots of garlic and spinach on rice.

I eat a lot of "stuff on stuff". It works :)

Yes! Stuff on stuff!!

Tonight we had chili on baked potatoes. YUM

Though I use the term "chili" loosely. It's mainly just whatever veggies and meat I have with mexican seasonings. There was bok choy in it, so not very authentic. :)

Waffles with raspberries and a dollop of Greek yogurt, fried eggs with green onions and hot sauce. Breakfast for dinner is so satisfying!

Vegetarian Kale Caesar Salad!
Other people find that bacon is their veg weakness but for me it's Caesar dressing. This was awwwwwesome (tho I'd use less lemon juice next time).

carnitas salads! we made a huge batch of spicy, lime-y pulled pork on saturday and have been eating it for dinner every night since then. romaine topped with avocado, cheese, sour cream, pork, and hot sauce. nommmmm
