no fair :( I'm allergic to cinnamon..Boo.

They all sound yummy..I may lick my computer if anyone posts photos:)

You should make pumpkin rolls with maple + dried cranberry + butter + sugar on the inside!! With a caramel glaze with nuts on top. And by caramel I mean butter, brown sugar, honey and vanilla.

Or maybe I should make those...

Here is a link to the King Arthur recipe for Cinnamon-Swirl Pumpkin Rolls. My mods are below!

for the dough
-use more pumpkin
-cinnamon inhibits yeast so I would leave it out of the dough, but i'd add a touch more nutmeg
-use more whole wheat as opposed to all purpose flour (i'd use fresh ground soft white wheat, but that's just me!)
-instead of water i'd use dairy kefir
-i might omit the special dry milk, but add in a bit of vital wheat gluten instead
-decrease the amount of yeast by half, and let it sit longer; ideally i'd convert this to sourdough but i can't think of that equation right now!

for the filling
-mix together butter and maple syrup, spread onto the rolled out dough
-use dried cranberries instead of the ginger

for the topping
-i don't have an exact recipe, but i use about 2-4 tablespoons butter, 2 tablespoons - 1/8 cup maple syrup, 2 tablespoons honey, a heavy splash of vanilla
-heat for a while, until bubbly
-don't let it get too dark because it's going in the oven as well
-chop up a handful or two of the nuts you like, pour the caramel in THEN sprinkle the nuts on top (don't put the nuts in first, ask me how i know)

I took mine into the office this morning and they are all gone already!

This year I threw some chickpea flour in with the wheat flour and it gave the bread this nice golden color. They were delicious!

I had friends over Sunday cause I knew I wouldn't have time baking on Monday. I made three different kinds: classic cinnamon, always appreciated cardamom and wild and daring Nutella with nuts

I can't believe I forgot until just now. I did make a cinnamon coffee cake this morning, but maybe I'll have to do some baking tonight (as the coffee cake has already been nommed up by my hungry co-workers)
