our friend's grandpa hit the motherload of morels and gave us some, and we are also going morel hunting this weekend and are sure to find a bunch more (we have a great spot)!
my mushroom-hating fiance loves morels, does anyone have any favorite things to do with them? i usually pan fry them and they are sooo yummy, but i would like to try some other things with them maybe too (risotto?)
this is what i do:
cut the morels in half lengthwise and soak them in lightly salted water which kills bugs and cleans them a bit. take the morels out and dump the water in your yard in a spot that gets south sun early in the spring (if you're really lucky the spores in the water will give you new morels next year). rinse the morels to get off any clinging bits of dirt and pat dry with paper towels.
in a small bowl put 2 eggs and a tablespoon or so of milk and whisk it up. in a ziploc bag, crush 1 sleeve of saltine crackers with a rolling pin into crumbs. you can add herbs/spices to the crumbs if you want, i usually add Penzey's Old World seasoning, then put the crumbs on a plate or in a shallow bowl. put a skillet on the stove and pour some oil, probably about 3 tablespoons or so but it really depends on how many mushrooms you are frying, turn the heat on the low side of medium. dip the mushroom halves in the egg mixture and coat them, then in the crumb mixture. then just fry them in the oil, a few minutes on each side or until browned. drain on papertowels. EAT! |

Mmm..morels..I haven't had them in such a long time, and it's been awhile since dad's gone out to "hunt" them.
Funny thing; a couple years ago, in California, they were selling for, like, $20 an ounce or somehting. The family had a laugh, cause you could look almost anywhere in the woods and find them a the time.
I don't have any special recipie to add since dad usually just sautes them in butter. |

i was going to post this topic too. my blog has become a morel blog lately, as we've found a bunch on our new land.
i saute them in butter, either with or without a flour coating, then add them to eggs, potatoes, salad, and pasta.

I'd never heard that bit about dumping the water in your yard, hoping to "plant" mushrooms. Does it ever work? Because, my ohmy, wouldn't it be nice to have your own little patch, right in your backyard!
