any tips for making some cilantro rice? im hoping to have it with my tacos tonite instead of regular spanish rice
but... i got quick cook rice... which maybe is a problem? |

Probably not, although I probably would cook the rice first, then add the cilantro and let it 'steam' for a few minutes, rather than cooking it the whole time you cook the rice--wouldn't that make it icky? _________________ "Fun is where you find it" - jackierocket |

it turned out SO well!! the boy even ate it and called it his favorite meal!! woo hoo!!!
i had instant rice so i added a half of a bunch of chopped cilantro and some chili powder and garlic powder to the water to boil
added the rice (1c) and let it sit. there was water left still (Because i cannot for the life of me EVER make good rice) so i added more fresh cliantro (1/4 of a bunch) and let it cook the rest of the water off, then added lime juice and salt and more chilipowder...
YUM!!!!!! |

Yummy!!!! I am so going to try that. May I ask if there is a particular brand of Chili spice you use?

the stuff we had was just the cheap generic brand. im not really into special spices, and i dont like overly spicy food. so it workedout.
i would reccommend starting with a mild chili powder, but thats just me |

The plain ordinary chili powder you get in the grocery store is really good--has the flavor you remember from tacos, etc. as a kid, and it's not very spicy.
My cousin makes chili powder and his is delicious and would really put hair on your chest, so I use it when I'm really out to make everyone run for a glass of water ;-)
I also got some positively excellent chipotle chili powder my folks brought back from Arizona. I babied that jar and put it in EVERYTHING except like, cornflakes and apple pie, and when it was gone the jar still smelled good so I put my regular powder in there to absorb every last teeny bit of flavor.
I still keep plain ordinary stuff around, though, because it's truly all purpose. _________________ "Fun is where you find it" - jackierocket |
