Inspired by the taco seasoning thread, I'm wondering if anyone has a kick-ass vegetarian taco recipe- it's the only thing I really miss since going veggie a little over a year ago!
I'm guessing this is going to be really easy, but I have almost no experience with meat substitutes and I definitely don't have the budget to experiment right now, but I'd splurge on something if I could have yummy tacos again.
I know there's a bunch of awesome veg*n cooks on here, so please please let me benefit from your talents!

| Portabella mushrooms are a great meat substitute, but have their own unique flavor. They make excellent taco fillings. |

Yves Veggie Cuisine has a product called "Veggie Ground Round" that's wonderful in tacos. It comes in Regular, Italian, and Mexican flavours. It's basically a vegetarian ground beef. All you have to do is heat it up.
I like refried beans in tacos too, and peppers sauteed with onions and cumin. And avocado and tomatoes and taco sauce and cheese and rice and sour cream. Yum yum. If you're vegan, plop on more avocado instead of the diary products. |

I often use black beans in like a jalepeno sauce (comes that way canned). They're good. You could also use the fake meat product if you miss the meaty taste/texture.
Oh, and I'm not veggie but still sometimes prefer to use the beans. More fiber! |

| the fake ground beef stuff is good, or you can use TVP (or TSP), texturised vegetable (or soy) protein, which is this dried stuff that you add water to; it sort of has the consistency of ground beef. it's really, really cheap (check it out at a healthfood store). or, any kinds of beans are awesome, mashed up a little, or not. as for spices -- chili powder and cumin, maybe some garlic powder. |

ooh, one more for you....I sauteed onion, garlic, ground cumin, minced jalapeno together, crumbled in some tempeh and let it cook for a while, then squeezed lime juice all over it and put it in steamed corn tortillas. It was SOOO good I ate the entire pan myself! Tempeh is my new favorite food because it was so meaty-delicious in those tacos. you could also add other veggies in like peppers, asparagus (trader joes has a great frozen asparugus tip bag you can just dump in), mushrooms, etc.

| lentils, cheese, salsa, sour cream, garlic,chili powder, rice, cut veggies (corn, lettuce, zucchini...). So yummy and a great way to use up leftovers, not to mention cheap! |

| I made tacos once by dumping a can of chickpeas and some cooked rice into a frying pan with a teensy bit of oil and an envelope of taco seasoning. Topped it off with diced tomatoes and shredded lettuce and some store bought taco sauce. It was yummy. |

| The taco filling I use is refried beans, with whole kidney beans mixed through it, and then seasoned to taste, topped with cheese, baby spinach and tomato. The bean mixture makes a lot, and the whole kidney beans gives it a bit better texture than just refried beans on its own, IMHO. |
