"healthy" care package foods?

My SO is dealing with a lot of stress lately and I want to do something a bit extra nice for him. We don't live in the same town, so I was thinking of mailing him a care package. Usually when I send people care packages, I load them up with things like cake or cookies. However, the boy is on a major health kick and I would like to be supportive of that also and send a less "junky" care package. Normally I demonstrate my support for healthy eating by making enormous veggie curries and such when we're visiting each other, but clearly those don't mail well.

So...brainstorm with me? My main goal is to come up with some snack-y type foods that don't involve a lot of added sugar (sugar from fruit is a-ok) or white flour.

The two big ideas I had so far were some homemade larabar "truffles" (basically pureed dates, dried fruit, and nuts), and dried apple rings (my gas oven is constantly at a low heat due to the pilot light so I have an automatic low quality food dehydrator). I also found a recipe for peanut butter cups made with unsweetened chocolate and was thinking of doing something like that but fancying them up by using almond butter or perhaps just some finely chopped pecans.

Jerky? If he's veg, I've made tofu jerky, which was okay, and I googled for seitan jerky recipes just now and found a bunch.

Oooh, jerky. I have been underwhelmed by tofu jerky in the past but maybe seitan would be tastier. He actually gets beef jerky at work (they supply the employees with some snacks) so even though he's not veg I might try a veg version as something a bit novel (plus I would be so nervous food safety if doing it w/ real meat, just because I haven't cooked meat in years).

nuts, dried fruit, crunchy roasted chickpeas, kale chips, tea, quality dark chocolate (a little goes a long way), popcorn

Ooooh, my kale plants are going crazy right now and he loves kale chips. I'll have to think about how to package them...maybe just save a plastic yogurt or cottage cheese container?
