i'm staying with a (relative) stranger in edmonton who has a super super super neat all-white kitchen (seriously!!) and likes planning a lot.
she's gone for the weekend and left me 8 "peaches" (labelled peaches, but no fuzz..so nectarines?) and told me to "use them all".
huh.
i also just went grocery shopping this weekend and realised that she would prob. be annoyed if i left a whole bunch of stuff behind. since i bought this whole box of "single serve" maple flavoured oatmeal, i thought i'd somehow combine the two.
voici - 'peach' breakfast crumble, a la stuff i found in somebody else's fridge
8 nectarines
1 tbsp honey (she has no sugar. in her whole house!!)
sprinkles of cinnamon and nutmeg
olive oil - few tbsp
5 packages maple flavoured oatmeal
1/2 tsp salt
sprinkle of cayenne (YA. HECK YA)
tbsp or two of margarine (ew, use butter if you have)
few fresh mint leaves julienned/squished
mix finely chopped peaches, honey, cinnamon and nutmeg, salt, cayenne and mint. squish a little.
squish some more if you're enjoying yourself.
set aside 4 of the five packages of oatmeal. sprinkle one of the packages into the fruit and mix up with a spoon. empty into a baking dish.
mix the remaining packages with the oatmeal. it won't be crumbly because oil isn't like that. it will be like a dough. make it into small crumbly pieces and spread over the fruit. dot with margarine.
bake at 375 for 1 hour. or more for less.
keep baking until your housepartment smells like "peaches". add vanilla into the fruit if you have some.
i plan on eating this for breakfast cause.. it isn't too unhealthy and also, i don't have anybody else to eat crumble with. and also my roommate is a nutritionist so i can't just lay into the icecream.

I killed the spam that resurrected this thread, but reading it, I thought it was worth resurrecting, anyway. (Because of a kid's field trip, I had to arrive at school an hour early, and I'm especially sleepy and hungry.)
