Anzac biscuits are a long standing tradition in Australia and NZ. Named because they were often sent overseas to serving troops (known collectively as the Australian and New Zealand Army Corps), and would stay good during the long transit time. They have no eggs in them, as they were hard to get during the war.

Oh, and a word of warning. You are not allowed to call these cookies. They are biscuits. The law says so (look it up on wikipedia if you don't believe me!)

Anzac biscuits

1/2 c plain flour
1/3 c sugar
2/3 c dessicated coconut
3/4 c rolled oats
50g butter
1 T golden syrup
1/2 t baking soda
2 T boiling water

Mix the flour, sugar, coconut and rolled oats in a bowl.

Melt the butter and golden syrup and stir to mix.

Dissolve the baking soda in the boiling water and add to the butter mix, then stir the wet ingredients into the dry ones.

Place tablespoon-sized pieces of the dough onto a cold greased baking tray (note, I shaped mine with my hands, as the dough doesn't really stick together). You should end up with 20 biscuits.

Bake at 180degC for about 15 minutes or until golden. They will harden somewhat on cooling.

Note: in NZ recipes, the following measures apply

1 t (teaspoon) = 5ml
1T (tablespoon) = 15ml
1 c (cup) = 250ml

Americans - I substitute corn syrup for golden syrup. It's not the same, but it's close enough. I can get Lyle's Golden Syrup, but at a specialty shop at specialty prices.

I don't think Golden Syrup ever goes off, so a can of it will last forever. Until you discover the wonders of Ginger Crunch that is. And then it will go through even faster if you discover how good it is on a hot buttered crumpet. Also, many people like a swirl of golden syrup on their porridge.

Yum! Anzac Biscuits are really good...I've got a bag of them now, in fact. If you are looking for a new recipe to try, these are really good and simple!

Yum, I love making these for my SO on his birthday or on Australia day! Aside from family and friends, I swear, he misses baked goods more than anything from home. We don't have any trouble getting Golden Syrup (at the specialty store, but you can make so many batches with a can that it lasts forever--so long as SO isn't snacking on spoonfuls here and there with everything!).

I think we need a thread devoted to Aus/NZ desserts and baked goods! Mostly because it would give me an excuse to pull the various biscuit and slice recipe collections gifted from my grandmother out of storage and start trying them out (thought I'm not sure how many of those are really "Australian" in the sense that things like anzac biscuits or pavlova are...anyway). Also because I love coconut in baking and that seems to be a common ingredient.

I made them!
Although they're practically all gone because the recipe doesn't make very many.
But they're so good! They're not sickening sweet and seem like you could easily add in nuts or something too. Definitely a keeper.

I subbed maple syrup and they were GREAT! Of course I have nothing to compare them to, but if since I don't know any better, maple syrup is a fine substitute (plus it helps that I have like 8 cans of the stuff in my pantry).

In the amount this recipe calls for, honey and corn syrup both work fine.

I have a sad contribution to this thread - before we moved to North Carolina a few weeks ago, I mailed all my books to my parents so we didn't have to send them with the movers. One of the boxes was opened and most of the books stolen, and one of those books was my Edmonds Cookery Book that my SIL gave me years ago :( :( :(

I need to get my hands on another copy!
