Hello,

I just ate two large servings of your Spinach and Ricotta Risotto and wow is it delicious!

I have been firmly omnivorous in the past (I fall into the "I'll eat it, what is it?" line of thinking) and this recipe alone is enough to have me thinking about going veggie.

It is beyond amazing food and I'm hoping that Knittykat goes out to the grocery store tonight to pick up more of the needed ingredients, because I can't wait to have it again.

Yum!

Hahaha! I'm glad you liked it, Mr. Knitty! Your letter made my day.

May I also heap some love onto you, W&P? I made your lentil salad and spiced roasted carrots last night for dinner, and had the leftovers for lunch today, and it was LOVELY.

Oooh, I'm glad those recipes worked for you! I'm also a big fan of the lentil salad, and I really liked what those spices did for the carrots.

As long as we're loving on W&P's recipes...I make pasta e ceci all the time! Healthy, and filling, and cheap. Pretty much the perfect broke college student recipe. Thanks so much for introducing me to it!

Would anybody be willing to provide links to the specific recipe posts in this thread? Because I would like to be a W&P recipe fan, too, but am too busy/lazy to look up these recipes.

Hi LooseyMama.

The other W&P recipes are on her blog. The link is in her glitter signature.

(Also love pasta e ceci. Except I add tomatoes and use red wine. . . which might make it a completely different recipe. But still wonderful.)

Can I join in on the group hug here? The lentil salad with goat's cheese and parsley is so, so good. I can't wait to make it again. Thank you, W&P!

I'm totally digging the Chomp! love! And I should blog about the Pasta e Ceci soon. I'm a little busy now, but I'll put up some more recipes as soon as I get a chance.

Loosey, as Persimmom said, all recipes are on my site. There's not that much up yet, but I hope you'll find something you like. (The lentil salad, as others have said, is really great, and it's easy too!)
