I actually made this for my own birthday dinner the other day, after I bought myself a cool little immersion blender as my present. I used it to blend up the soup and the pesto, and it was way neater than doing all that with the food processor, yay! (Never thought I'd ever complain about the food processor, I love that thing.) Anyways, I love this soup, it came out very herby-y, rosemary-y. I didn't change anything except I added a bit more celery, because I like that. And I reserved both some of the chickpeas as well as the other vegetables.

Made this for dinner tonight, and it was delicious. I think next time I'll use a little more rosemary. Love that this can be vegan, too! This looks delish and I am going to get the ingredients next time I am at the store.
I am a fan of super simple pasta e ceci though, I just nuke a can of chickpeas (not in the can of course...) and boil some pasta shapes such as elbow macaroni or shells and then combine as much as I want of each, splash in a little of the liquid the ceci were in, some olive oil, black pepper and ground parmesan and voila! insta dinner. My Mom always used to make this for us when I was a child so it reminds me of my childhood and is very comforting. |

I'm so happy this recipe is still in rotation!
I am planning on making it this Saturday for my going away party. It's just that good, and I haven't had any in a while.

Holy smokes!
I made this tonight and it was delish! It reminded me of a gratin macaroni casserole. ( I burnt my tongue I ate it so fast.)

I tried doing this recently with red chili beans instead of chickpeas, and it just wasn't as good. I have also done a version that I added some leftover tomato-based pasta sauce too, and that was gooooood.
The kidlet really likes it because it's comfort food she can feel good about eating - it's warm and good-mushy and has comfort food flavors, but is still full of veggies and fiber, especially if I use whole-wheat pasta. Definitely going into the cookbook I'm putting together for her. |

Made this last week and halleleujah my husband loved it! (I loved it too) We had a fight (seriously - it was stupid) over the leftovers. I'm going to make another double batch tonight.
I'm *so* thrilled he loved it (and wanted to fight over it) because it has no meat. I have to find more recipes like this, hearty and lots of protein without meat. |
