| I'm not even Christian, but Easter has come to mean a holiday of good food and family get-togethers, similar to Christmas. I might even like Easter better than Christmas because you get the fun but not as much stress. So what is everyone making for Easter dinner or brunch? I'm in charge of dessert, so I'd like some ideas for something fresh, light, and springy. My first thought was lemon squares, but I'd want something more special. |

Ooh!
I am making mini key lime pies. SUPER easy, tasty, springy!
I just bought pre-made mini graham cracker pie crusts, but you could make your own in a muffin tin (or mini muffin tin) or could just make a big pie too.
I just bought a bottle of key lime juice- the recipe is on the back.
I'm also making a carrot cake.
For "real" food, we ALWAYS have ham, cheesey potatoes, broccoli/raisin/bacon salad. ANd then usually deviled eggs, relish tray, other sweets. The whole spread.

Easter is a special time for us. We have brunch and then we get stinking drunk at the Miss. Bunny pageant at the local bar... everyone wears giant crepe paper bonnets.
The menu is out pretty standard fare, plus a ham. _________________ You may have to sacrifice a bit of modesty in the name of badassery! -Knittykat |

ill probably have a peanut butter sandwich.
but traditional in my family is:
ham
glazed carrots and pearl onions
au gratin potatoes
green beans with tomato-bacon topping
green salad
deviled eggs
dessert - last year i made a lemon mousse tart and my gmil made this weird strawberry jello with pretzels thing. _________________ candy to carrots |

I LOVE the strawberry pretzel thing! My aunts make it. I think there's some sort of cheesecake-like layer.

And yet again I wish I were invited to Pinkie's party.
I might attempt brioches this year. Smoked fish is a standard (tired of salmon, so I think I'll go with smoked eel or tuna). And a pretty little fruit salad, with spiced yogurt cheese, honey and nuts. And maybe poached eggs with clarified butter and some kind of salty sea vegetable or steamed baby spinach. And this year I have my mind set on making a butter lamb, if i can find a mold. _________________ The plural of anecdote is not data.

Ham, scalloped potatoes, lasagna and home made pie!

"american" easter fare has always baffled me...
the proper way to celebrate easter is to make a whole lamb roasted on a spit or lamb chops. as long as there's lamb, it's gonna be a good Easter ;) (fyi, I'm Greek.)
Everything else is secondary. but there's usually roasted potatos, dandelion greens, tiropita, spanakopita, grilled zuchini & eggplant...
dessert ranges from baklava to galatoboureko (custard wrapped in fyllo dough soaked in honey) to a traditional Greek Easter bread called tsoureki.
after a week of fasting from meat & eggs & cheese, Saturday night (er... early sunday morning) after church is the fast-breaker - we eat a soup called "mayeritsa" - which is traditionally made w/ all the innards (bleth!) of the lamb you're roasing on easter. but my dad makes it w/o all the gross stuff. We break red eggs and eat tsoureki with the soup. If you have any questions about the recipe let me know...
Strawberry Pretzel Jello
1/2 cup crushed pretzels
3 T sugar
3/4 cup melted butter
8 oz cream cheese
1 cup sugar
16 oz cool whip
6 oz strawberry jello
2 cups boiling water
16 oz frozen strawberries
Mix pretzels, sugar (3 T) and melted butter together and press into a 9x13 pan and bake at 400 for 6 min
Beat cream cheese, sugar (1 cup) and 12 oz of cool whip and spread over the baked pretzels - chill
Mix jello, water and frozen berries and pour over cream cheese layer
Once the jello has set spread the remaining cool whip on top and serve |

I will likely have a Subway sandwich. (I'm working.)
But my family will be having turkey, ham, my dad's sesame green beans, The Greatest Side Dish In The Whole World (the cheesey potatoes), and lots and lots of candy. Oh, and fruit salad and veggie tray.
I told my dad to make extra of the Greatest Side Dish In The Whole World. Like, a pan extra. _________________ beefy and confused. |

I dunno about light and springy, but my family's all time favorite dessert is Bacardi Rum Cake... http://baking.about.com/cs/cakes/a/bacardirum.htm
Of course I cheat and don't boil off all the rum. lol. But I wouldn't do that if kids were eating it.
Second favorite is French Cherry Pie, served chilled...

Both are absolutely divine.
If you just want to send them into a sugar coma until Christmas, take a Costco chocolate, chocolate chip muffin and place it in a bowl. Slice it in half. Nuke it for a couple of seconds to make it hot. Place a scoop of Ben & Jerry's Chocolate Chip Cookie Dough ice cream in the center, and pour cherry brandy over the whole thing. Make one for each guest. |
