last night i made the mexican pumpin soup from fatfreevegan kitchen, though i have tweaked her recipe so much that mine only vaguely resembles hers.

i also made another batch of my fan-freaking-tastic vegan super omega-3 muffins last night because i wanted to test my recipe and because we had eaten all of the first batch. i'm so excited/proud of this recipe because i completely made it up myself. and muffins are hard to get right, yo! let alone vegan muffins!

KTD-sweet potatoes go well with burritos.

Everyone's food sounds so delicious. I'm hungry now and it's only 11:30. Damn.

I'm pretty content to eat the same thing over and over, so I'll have the same thing tonight as I had last night (the buffalo tofu Milo posted and roasted brussels sprouts), which is almost the same thing as I had the night before (buffalo tofu and roasted cauliflower). Tonight is the last serving of tofu so I'll probably go back to refried beans and sweet potatoes mixed together and topped with cheddar and taco bell mild sauce. I'm going to have to go to taco bell soon because I'm almost out of sauce.

The burritos I made last night were seriously amazing, but mostly due to the salsa. I'm very impressed with myself, since it's the first time I ever made salsa, and it turned out really well. Good thing too, because I made like 6 jars of it.

I have no idea what to do for dinner tonight. Maybe we'll go out.

tonight im making broiled blue hake filets probably with lemon and herbs with red skinned mashed taters and steamed broccoli. the weather has been too crappy to go to the store and im trying to use up everything in the fridge/freezer.

I just got four big bunches of free(!!!) broccoli from the Agriculture Council--they had their Legislative Day yesterday, and always bring bunches of fresh vegetables for the staff--so I'm thinking a big chicken stir-fry with yellow peppers, onion, carrots, snow peas and lots and lots of broccoli. Then I'll steam and freeze the rest.

Renaissance of Tuna Casserole
Recipe courtesy Rachael Ray

Salt
1 pound fettuccine
3 tablespoons extra-virgin olive oil, 3 turns of the pan
4 cloves garlic, finely chopped
1 small onion, chopped
2 (6-ounce) cans Italian tuna in water or oil, drained
1/2 cup tender sun-dried tomatoes, thinly sliced, available in small pouches in produce department
1/2 cup dry white wine, a couple of turns of the pan
1/2 cup heavy cream, a couple of turns of the pan
Black pepper
1/2 cup frozen peas, a couple of handfuls
Couple handfuls grated Parmigiano-Reggiano
1 cup fresh basil, about 20 leaves, shredded

Place pasta water on to boil. Salt water then add pasta and cook to al dente.

While pasta cooks, heat a deep skillet over medium heat with extra-virgin olive oil. Saute garlic and onions until tender, 4 to 5 minutes. Add tuna and sun-dried tomatoes and stir to heat through, another 1 to 2 minutes. Add wine and cook it down a minute then add cream and season sauce with salt and pepper. Toss hot pasta and peas with sauce and cheese. Serve on dinner plates and top with shredded basil.

That tuna casserole situation sounds good...
I think I'm making wasabi crusted salmon with baked sweet potatoes and brussels sprouts with brown butter, lemon, and pistachios. One of my favorite meals of all time.
