| The asparagus season has just started here, I had my first on Sunday and they were soooo good, juicy and tasty and yummy beyond belief. I have now decided that asparagus will be my food of the summer 2005 (to hell with the expense!), so was just wondering if any of you had some exciting and delicious asparagus recipies, or just different ways of cooking/eating them? All we did with the last ones was boil them for 10minutes and pour melted butter over them-anybody more inventive? |

Do the same thing, but put some olive oil (the good stuff!), some balsamic vinegar, some hard tasteful cheese like parmesan cheese. Such a delicious appetiser.
Or do what I just mentionen and serve with some pasta. Sooo tasty too :) Or together with pasta and some white fish that has been marinated in white wine and lemon juice (no salt though as that will make the fish dry)
Or the asparagus (as above) together with said fish and beans that have been first boiled until done and then put together with a lot of garlic and some olive oil and sauteed for a bit.
Yummy.. Now I got hungry :) I think I will make this for my boyfriend as a birthday-gift-meal :) |

My ex used to make a 3 cheese and asparagus quiche...
It was amazing.

mmm, use them in an omelette..also, in pilaf (basically, saute asparagus and other veggies in a pan with oil, add rice and continue to saute until rice turns opaque, use broth instead of water, cover and simmer for recommended time on rice pakage. YUM). I do this with trader joe's frozen asparagus a lot.
also, they are GREAT if you roast them. set oven to 375, put them in a pan, coat with oil, salt, herbs, whatever and let them go for about an hour or so. For more flavor add other veggies to the pan as well (mushrooms, onions, peppers). Stir occasionally, take out when the veggies caramalize and get browned up. |

i like to steam it and then add a bit of butter, fresh lemon juice, kosher salt, and fresh dill weed, that is my favorite way of eating it.
also yummy is to drizzle with olive oil and salt, then grated parmesan cheese, and roast it in the oven or put it on the grill (in a basket or on foil!)
i love it so much an its so yummy right now that i think it is a shame to put it in something, but when it is not as good or i have to buy it from the supermarket, i like to put it in risotto. |

I second the steaming of asparagus. mmm, I like to add basalmic vinegar to the steam water, adds a bit of flavour to the asparagus!
I also enjoy a salad with asparagus (I hate lettuce, so any salad's w/o lettuce are extra good imo). Cooked asparagus (but still crunchy) with halved baby tomatoes, cubed jalepeno havarti cheese and shredded roast chicken. Asparagus and feta frittatas Rock!
Mix your favorite herbs up with some eggs or egg substitute - set aside
sautee some asparagus with a little butter - set aside
re-heat non-stick skillet with a little butter, throw your eggs in there, let them cook a minute add your asparagus and some feta, stick it in a pre heated 350 degree oven till it's puffy and a little brown
viola! Asparagus and feta frittata. I like to serve it with a little seasonal fruit:) _________________ Do you garage rock? |

| i found this super-easy and good recipe in martha stewart one time--you just chop up the asparagus in about 1 1/2" pieces, and sautee them in sesame oil. it only takes about five minutes to do this. then you toss in a handful of sesame seeds. |

love love love love them grilled
soak for 10mins in cold water, drain
put on the grill! not on the flame tho... they are crispy and YUMMY also great on the 'foreman' grill or in a pan
butter and salt and pepper are KEY
i love asparagus with grilled fish and sweet potatoes |

i love asparagus! i steam them and then put them in a frying pan for only like 5 minutes w/ butter, garlic and onions. yum. sprinkle w/ parm. cheese _________________ Only dead fish go with the flow! |

well for my mom's b-day instead of making a cake (cause she was on a diet) i made a big salad and stuck a few asparagus strait up as if they were the candles. cuase they kinda look like candles they way there shaped
anyways everybody loved it and thought it was so cute.

It's pretty light, very easy and yummy.

Here's my asparagus recipe:
Pasta & Shrimp in Asparagus Sauce
- 12oz fresh or frozen shrimp - peeled and deveined (you can either leave this out or maybe use chicken if you prefer)
- 1.5lbs fresh asparagus spears
- 8oz gemelli, rotini or other shaped pasta (dry)
- 1 cup chicken stock
- 1/4 cup sour cream
- 2 tbs. flour
- 1/4 tsp. salt
- 1/8 tsp white pepper
- 1 tbs lemon juice
Cut asparagus into 1-1.5" pieces. Boil until tender.
Drain water, reserving 1/4cup of the water.
set aside 4oz of the asparagus (preferably tips)
In a blender, combine remaining asparagus and reserved liquid and blend into a puree.
Boil pasta, add shrimp in last 3 minutes if not already cooked.
Drain, return to pan and add asparagus tips.
In a med. sauce pan stir together chicken stock, sour cream, flour, salt, pepper. Add asparagus puree and lemon juice.
Cook and stir over medium heat until bubbly, cook one more minute until thickened.
Pour sause over pasta and toss to coat.
Enjoy!
It's a pretty creamy dish, but only has 5g/fat per serving. Not too shabby!!! |

I got this recipe from cooking light. Everyone always loves it!
Open-Faced Asparagus & Turkey Sandwiches
You will need:
1 bunch of asparagus
sliced deli turkey (I prefer smoked)
sliced mozzarella cheese
tomatoes
sourdough bread
mayonnaise
pesto
Begin by steaming the asparagus until it turns a brighter green. Don't overcook it.
Slice the bread into medium thick slices. In a small bowl, combine two parts mayonnaise to one part pesto. Spread this mixture on the bread slices.
Put a slice of turkey on the bread, followed by a few stalks of asparagus, followed by a slice or two of tomato, followed by a slice of cheese. Sprinkle a little black pepper and/or oregano on top.
Place sandwiches on a cookie sheet into a pre-heated oven (or broiler). I usually put mine at about 350. Bake/broil the sandwiches until the cheese is melted and bubbly. Eat! |
