Pea soup!
Let ½kg of dried peas soak over night in a lot of water. Rinse. Put in a large pot with new water and let boil for 1½ hour together with a peeled onion that is just halved. Add some vegan broth, (possibly some carrots) and add thyme at the end of the cooking time.
Near zero work, and really tasty!
Hope you enjoy! :) Is a really hearty soup as it is, but eaten with some vegan bread is really tasty to. And some people, not me though, like to add a spoonful of mustard in their own bowl when eating.

ok I don't have any recipes per se, since I don't really cook, but I just wanted to say that there are so many yummy recipes and substitutes out there that you won't even miss dairy.
if you like to cook, someone gave me a great book once called "The Vegan Gourmet". Actually, if you want it, let me know and I can send it to you, since I don't really cook and have used it only to hand to boyfriends who want to cook for me. (well, assuming I can find it!)
some of my favorite quick vegan meals:
polenta and mushrooms with sundried tomatoes
pesto made with no parmesan, but extra garlic and nuts, over pasta
vegan boca burger tacos without cheese
smoothies made with soy yogurt
this fabulous vegan frozen ravioli from whole foods, I forget the brand but they were yummy

oh my, these are so good. i know they probably won't apply to you because brownies don't usually have milk....but for any other vegans out there, i don't want you to miss this. Once I made these in a bowl-shaped dish with fresh cherries cut up into the batter. Oh my. So amazing. Enjoy!
Vegan Brownies--adapted from 'The Farm Vegetarian Cookbook'

Mix 1/3 c. flour with 1 c. water.
Cook until thick over low heat, stirring frequently. Cool completely. Yes, this is worth it.
Melt 1/2 c. margarine. Add 3/4 c. cocoa & stir until smooth.
Cool.
Beat 2 c. sugar, 1/2 t. salt & 1 t. vanilla into
the cooled flour mixture, then add cocoa mixture.
Mix together 1 1/2 c. flour & 2 t. baking powder
& add to above ingredients.
Bake in a 10" square greased pan at 350 degrees F. for 35 minutes
or until an inserted knife comes out clean. I think I have also made these in a slightly smaller pan, and they came out just fine. |

Mom's Chocolate Wacky Cake
Preheat oven to 350.
mix together:
3 cups flour
2 cups sugar
1/2 cup cocoa powder
2 t. baking soda
1 t. salt
then add:
3/4 cup oil
2 t. vanilla
2 cups cold water
Grease pan and flour. It fits into a 9 by 12 but for the cake I used a round 8 incher and put the leftover into cupcake tins.
Right before adding mixture to the pan, stir in 2 t. vinegar. This does the rising part.
Bake 40-45 minutes or until toothpick comes out clean. For some reason mine yesterday took a lot less time but I think my oven is messed up.
Also, you should look into buying the book [bEcological Cooking by Joanne Stepaniak[/b]. My brother got it for me years ago and it just so happens to be vegan. Its a simple book with easy recipes with a lot of the same ingredients that are easy to find. I have another cookbook that seems to use really expensive hard to find ingredients. Anyhow, this book is really great. I'm not sure if its still in print but I bet amazon has it at least used.
Make lasagna just like you would normally, but in place of hte cheese use tofu. Just spice it up a lot...add a little sauce to it, garlic, basil, nutritional yeast, a little salt and pepper, etc. Then for the topping on the lasagne, you could do soy cheese or sprinkle on a bunch of nutritional yeast. SO GOOD. The tofu ends up being super flavorful. |

Knitwitless mentioned it, and I highly recommend the books How it All Vegan and the Garden of Vegan if you haven't looked through them already. The recipes are great and the books (and the authors) are so damned cute! Here's the website : www.govegan.net
Last night I made some delicious vegan enchiladas that were super easy. I sauteed some eggplant, onion, and green peppers in olive oil for about 10 minutes. I then rolled this mixture, along with refried beans and soy cheese, up in flour tortillas, put them in a casseroule dish, poured store-bought enchilada sauce over it, put some soy cheese on top, then baked for 25 minutes at 350F. Top it with Tofutti Sour Cream when you serve it up. Yum!
Good luck in cutting out the dairy! I'm not sure what it's like where you live, but being vegan (are you trying to become vegan or a meat eater who avoids dairy? sorry if I'm assuming you want to become vegan:)) has become a LOT easier in recent years. Here in Seattle, we even have a bunch of all-vegan restaurants now, and some other restaurants have vegan options.
Edit: Oh, I just saw that you're in Canada. 350F = 177C. |

I don't really have a recipe for it, but one of my favorite foods is rice and beans. I kind of make it differently each time, because experimenting is fun!
I just made these cookies from the vegweb site, and they were pretty darn good! I used half brown sugar instead of all regular, and the dough was a little dry, so I added egg replacer for one egg. Oh, and I baked them in the toaster oven, and just spread all of the dough into the little pan that came with it, so I had cookie bars!
* 2 cups unbleached flour
* 2 tsps baking powder
* 1/2 tsp.salt
* cinnamon to taste (optional)
* vegan chocolate or carob chips - put in as many as you like
* 1 cup raw vegan sugar (turbinado #1, sucanat works too but sucks up a lot of the moisture)
* 1/2 cup canola or vegetable oil
* 1 teaspoon vanilla
* 1/4 cup water
Directions:
VERY IMPORTANT-make sure all ingredients are at room temperature. It will work if they're not at room temp but it works MUCH better if they are. Also while your oven is pre- heating put the cookie sheets you are going to use on top of the oven so they get preheated as well. Preheat oven to 350.
In a large bowl mix flour, baking powder, salt, cinnamon (if you choose). Add chips. Make a well in the center and set aside.
In a medium size bowl mix vegan sugar and oil. Mix it well. Add the vanilla and then add the water. Mix it well. Add the wet to the well in the dry. Mix it well but be careful not to overwork it. Add more chips if you need to. Spoon onto ungreased cookie sheets. Put them in the oven. Bake for 5 minutes and then flip and rotate the sheets.(top to bottom,and 180 degree rotation) Bake another 4 minutes and check them.
The cookies are done when they seem a little bit softer then you want them to be. They will harden up some as they cool. I usually go in two minute increments from here untill they get to where I like them.
Take them out when they are done and move them to wire cooling racks. If they split or come apart when you try to remove them let them sit on the pan for 2 minutes before transferring them to the racks. |

I am not vegan, but I make this from time to time at home. I do not follow a specific recipe, but you can adjust it to your own liking.
Cook a package of lentils until they are just mushy (A tad bit overdone--enough where if you mashed them some would stay intact but the majority would mash).
drain the lentils. and put in a big mixing bowl
in a skillet, sautee chopped red bell pepper, onion, cilantro, garlic in olive oil. add to the bowl of lentils and mix it all together. Add salt, pepper, tumeric, cumin, and a can of tomato paste. if you like it really spicy, add some cayenne pepper.
use this for burrito filling or tacos. yummy with tofu sour cream! |

I've made them twice now, and wow! They're amazing!
I'm not vegan, but I like to cut down on animal products. If I want to eat a hard-boiled egg because I like the way it tastes, fine, but if I can brownies that taste just as good or even better than with eggs, I'm going to make them without. _________________ i live at the foot of a mountain: some of my adventures |

i posted these in la vida's "no more cheese" thread and thought i'd cut and paste. i'll add more to these, though. i have a TON of vegan recipes that are my favorite.
gee whiz spread:
1 (15.5 oz) can great northern beans (about 1 1/2 cups) rinsed well and drained
1/2 cup roasted red pepper, either fresh or from a jar, drained and chopped (don't try to make it without this--it will SUCK!)
6 TBSP nutritional yeast flakes
3 TBSP fresh lemon juice
2-3 TBSP tahini
1/2 tsp onion powder
1/2 tsp prepared yellow mustard
1/2 tsp salt
combine all ingredients in a blender and process until smooth. transfer to a storage container and chill thoroughly before serving.
note: you will be SHOCKED by how much this tastes like cheez whiz. seriously. first time i made it i could. not. believe. it. it is AWESOME.
mostarella cheeze
2 cups water
1/2 cup nutritional yeast flakes
1/3 cup quick-cooking rolled oats (do not substitute)
1/4 cup tahini
4 TBSP arrowroot or cornstarch
3-4 TBSP lemon juice
1 TBSP onion granules
1 tsp salt
process all the ingredients in a blender for several minutes until very smooth.
pour into a saucepan and cook over medium heat, stirring constantly, until very thick and smooth.
pack into a lightly oiled, 3 cup rectangular mold, loaf pan or other small rectangular container and cool. for round slices, pack into a small straight sided cylindrical container. cool, cover, chill overnight. turn out of mold and carefully slice when ready to use. store in refrigerator.
**smoky provolone:
prepare mostarella cheese, but add, to taste during blending your choice of 1/2 TBSP hickory smoked nutritional yeast, 1/4 to 1/2 tsp hickory salt or 1/4 tsp liquid smoke.
this is really really really good on pizza.
colby cheeze
1 1/2 cup water
5TBSP agar flakes
1/2 cup roasted red pepper, fresh or from a jar
1/2 cup RAW cashew pieces (RAW!!!)
1/4 cup nutritional yeast flakes
3 TBSP fresh lemon juice
2TBSP tahini
2 tsp onion powder
1 tsp salt
1/4 tsp garlic powder
1/8 tsp ground dill seed
1/8 tsp mustard powder
place the water and agar flakes in a small saucepan, bring to a boil. reduce the heat and simmer for 5 minutes, stirring often. place it in a blender with the remaining ingredients, and process until completely smooth.
pour immediately into a lightly oiled, 3 cup rectangular mold, loaf pan or other mold of choice. cover and chill for several hours or overnight. turn out of mold and slice when ready to serve. store leftovers in the fridge.
**olive cheeze:
prepare colby cheese as above, replacing the ground dill and mustard powder with 1 TBSP dijon mustard. after blending, stir in 3/4 cup chopped black olives.

I'm not a vegan, though I am a veggie who is attempting to cut down on dairy etc cause it makes me phlemgy and gross, so I'm trying to make at least 4 vegan main meals a week. Last night I made a lentil bake which was so exceedingly scrumptious it exceeded all my expectations. Haven't got the recipe to hand at the moment but will post it when I can.
Also yesterday, I made a damn fine ridiculously easy spicy bean pate:
-1 can red kidney beans, drained
-1 tbs tomato puree
-1 garlic clove
-1 tsp chilli powder
-basil or whatever other herb you fancy
-salt
-1 tsp lemon juice
Basically just blend everything together. It is tasty and nutritous and perfect for sandwhich fillings etc. Mmmmm.
Great recipes from everyone here-very helpful for everyone having a go at any semblance of a vegan diet! |
