Skillet Paella
(serves 4)
*preheat oven to 350 deg.
8 chicken drumsticks
salt & pepper
*Season drumsticks w/ salt & pepper, brown in oven safe skillet or Dutch oven approximately 4 minutes per side--they won't be cooked all the way through just browned. Remove to plate.
1 onion, chopped
1/2 green pepper, chopped
3 cloves garlic crushed
1 1/2 cups rice
1 large can diced tomatoes w/ juice
1 small can corn, drained
1 t turmeric
3 cups chicken broth
*Saute in skillet; onion, pepper, and garlic in oil about 5 min. Add rice, cook for 1 min or so (keeps rice from sticking). Add tomatoes, corn, and chicken broth (mix turmeric into chicken broth). Bring to a boil, remove from heat. Nestle chicken legs in rice stuff, cover skillet w/foil, place in oven and bake for 1 hour. Check to make sure chicken & rice are both done. If so, remove foil.
1/2 cup frozen baby shrimp
*Place baby shrimp on top of rice & chicken, allow to bake 15 minutes more with foil off, or until shrimp is heated through.
This is a nice company meal. I use a BIG black cast iron skillet and serve it right in the skillet. I usually arrange the chicken legs in a wagon-wheel pattern and it is a very impressive looking dish.
It is also a fun way to serve a really cheap meal (rice & drumsticks, very cheap) but no one will realize! _________________ "Fun is where you find it" - jackierocket |

Don't be put off by the long list--it's not tough at all. Mr. Knittykat made it once and he's a beginner Kitchen Wizard. I think we even took a picture of it.
