my newest food obsessions are Tofu and Eggplant (xuli, aren't you proud??) Our local eat in Chinese restaurant makes this YUMMY tofu and eggplant dish, what could be better?

But my question is this, tonight I cooked some sliced eggplant, that I had very lightly coated with flour, in veg oil until it was tender and golden brown. When I ate it, it kinda stung my mouth.

Why do I get this stingy feeling?

Eggplant can be bitter. Would you describe it that way?

Some people always salt their cut eggplant and let it drain, then rinse to get rid of the bitter. Some people swear by peeling.

Me? I do young eggplant, that is smaller and fresher and definitely not wrinkled, but never salt or peel.

If you grow your own, don't let the plant with fruit on it wilt, ever. That's pretty key to keeping it from being bitter.

artemis, that sounds yummy.

And no it's not bitter, although I know what you're talking about, it's more like the pineapple thing.

I would describe it as an acidic sting, but I didn't think eggplant was acidic.

i think it has an enzyme in it (like pineapple) that is pretty hardcore. i know the feeling you mean. if it's an enzyme, probably the logical solution is just to cook it more. i know that if there are any hard bits left because i've undercooked some aubergine (our cooler word for eggplant :) then it can be kind of unpleasant.

perhaps you have acquired an allergy to eggplant. my husband is allergic. he can't eat it - it burns his mouth. I could make the blandest thing with just some eggplant and he will think it's loaded with hot pepper! his brother is also allergic to it. they were not allergic when they were little.
(I don't really make bland things... hehe)

Oh, indeed. But if you've gotten your husband to eat either of those foods, I'd love to know how. I've gotten my boyfriend to like tofu, but he won't go near eggplant. :(

Try laying off the eggplant for a week or two and your reaction to it might go away. A lot of times food sensitivities crop up when you've been eating a lot of one kind of food. My dad has hella food allergies and he rotates his foods so he can eat grains which are not, um, quinoa. (Although there is still a lot of quinoa involved.)

I get the same thing, PretendingSanity. I have to have the eggplant cooked all the way to mush, and then it's fine. If there is any chewiness left to it at all it irritates my mouth. I salt it before cooking, but I don't really think that does anything for me. Slice it thin so it will definitely cook all the way. I don't eat it much just because it's such a pain to prepare it properly.

a) was it kinda spongy or total mush when you cooked it? usually eggplants need to be cooked in some two step process, like frying, then frying again, or baking, etc.

b) did your lips feel itchy and kinda numbish at the same time? i eat plain yoghurt, like a few tablespoons after or during an eggplant meal.

c) there are times when i can eat all the (ripe)eggplant in front of me w/o any reaction. it's like there's really small window even within the perfectly ripe time frame that can taste sweet to me. like two or four out of a sack of twenty can taste sweet, like perfect french fries, and everything else is just "not right".
